Cakey Gingerbread Squares Recipe

1 ts Ground cinnamon
8 tb Unsalted butter; at room temperature
1/2 ts Ground allspice
1/2 ts Ground nutmeg
1/2 c Sugar
1/2 ts Salt
2 ea Large eggs
1/4 ts Ground cloves
1 x Grated zest of 1 orange
1 c Unsulfured molasses
2 1/2 c Sifted all-purpose flour
1 c Boiling water
2 ts Baking soda
1 x Confectioners’ sugar;
2 ts ground ginger
Preheat oven to 350. Butter and flour 9-inch baking pan. Mix butter on high, 1 min, until creamy. Add sugar, mix 2 more minutes, beating in eggs and orange zest. Sift in remaning dry ingredients. Combine molasses and boiling water in cup and beat in. Pour batter in pan and bake 40-50 minutes, until toothpick inserted in center comes out clean and cake has shrunk from sides of pan. Cool 5 minutes. Dust confectiners’ sugar over top of cake. 12-16 servings.
